I probably must have been in school when one day, I walked down to a nearby popular food joint that sold delicious rolls and I ordered an egg chicken roll. Like every time, I watched the cook assemble my roll very carefully. However, at that time, something was different. He reached out for a big block of cheese and grated it over my roll, rolled it and then handed it over to me. No. Nope. Nahi. Na. Nada. NO CHEESE ON MY ROLLS!
That was the first time I had seen a street food seller turn experimental over an iconic Kolkata street food item. I thought it was a phase that would soon turn unpopular and obsolete. But I was wrong. As the years passed by, more and more street food joints started to add cheese (and mayonnaise!) to the food.
And soon we had cheese dosa, cheese vada pav, cheese momo, cheese samosa…good god stop with the madness.
I hate cheese being added to Indian foods, and I realize that to say that aloud today is controversial because it has become mainstream. However, several people online are picking up the courage to share their controversial street food opinions after one Twitter user posted this:

Tandoori momo/Fried momo isn’t the real deal. Also, clear soup with steamed momo is underrated.

the classism and supremacy associated with practicing “vegetarianism” holds back Indian street food from evolving and experimenting with more ingredients. schezwan and mayo and cheese ARE NOT actual flavors that make anything better https://t.co/jjDjj3vEZu

Let people have the "weird" combinations. Mayo with momo, malai soya chaap, tandoori sauce, mango lassis might be war crime stuff for some, but some places can actually make 'em taste good. Y'all purists real mad. https://t.co/8MJRDoTzLE
