One of the few things that unite all of us is probably our love for Biryani.

For many, biryani means a lot more than just a delicacy. Interestingly, the biryani you love might be just one of the many variants of biryanis that are available throughout our country.

It is one of the few dishes that is popular throughout India, but in each place it is made in a different way.

Here are some popular variants of our favourite dish.
 

1. Hyderabadi Biryani

Your trip to Hyderabad can never be complete if you miss out on this famous delicacy of the city. It is undoubtedly one of the most popular types of biryani. The delicious biryani is made with basmati rice and meat or chicken. There is a unique way of preparing this heritage delicacy.

What makes it stand out is the usage of saffron and coconut. This biryani is cooked in layers and that is the most challenging part in its creation. Unlike other biryanis where the meat is given priority, in this biryani, the cooking of the saffron mixed rice is given more importance.
 

2. Lucknowi Biryani

Whenever you think of Lucknow, its biryani is definitely one of the first things that come The Lucknowi Biryani uses the Persian style of cooking the dish. The method of making this biryani is known as ‘dum pukth’, which is a reason why this biryani is often referred as the ‘dum pukth’ biryani.

Dum Pukht means slow cooking in a sealed container. This popular cooking method dates back hundreds of years. The interesting part is that no extra water is added while preparing the biryani so that the meat cooks in its own juices.

Making the biryani tastier. It is often served in sealed handis and usually uses light spices.
 

3. Dindigul Biryani

This pretty place in Tamil Nadu is quite famous for its unique biryani.

The rice used in it is very different as it uses the jeera samba rice instead of the usual Basmati, giving it an entirely new flavour.

The biryani also uses cube-sized mutton chicken pieces instead of big chunks. Apart from the usual masala, a lot of pepper is used.
 

4. Ambur Biryani

This little town in Tamil Nadu must be on your bucket list if you really love biryanis. This biryani has a distinct flavor of because of the use of mint and coriander.

The highlight of this biryani is the fact that chefs soak the meat in curd before adding it to the rice, which imparts a unique taste to the dish.
 

5. Bhatkali Biryani

Unlike other South Indian Biryanis, this biryani is quite low on spices. This type of biryani is found usually in the coastal parts of Karnataka. This particular style originated from the Nawayath Muslim community of Bhatkal, in coastal Karnataka.

Quite like the dum-pukt biryani, this biryani is also cooked in layers. You might find quite a bit of chili and onions in this biryani. The chef actually cooks the meat in the curd thus giving it a distinct flavour.
 

6. Thalaserry Biryani

The Thaleserry Biryani uses a short grain, thin rice instead of the basmati. This biryani is quite popular in the Malabar belt. It is an indigenous recipe of Malabar and the dish is a perfect marriage of Mughal and Malabar cuisine.

Along with spices, you would find a generous amount of cashew nuts and raisins in this type of biryani.
 

7. Kolkata Biryani

The Kolkata biryani is another very popular variant of biryani. The thing that separates this biryani from all other biryanis is the presence of large potato chunk. This biryani is quite low on spices which give it its distinct sweet taste.

Another thing that separates it from other biryanis is its distinct yellow colour.
 

8. Beary Biryani

This biryani is quite famous in the southern part of Karnataka. This dish was made popular by the beary muslim community.

The Basmati Rice is cooked separately with ghee and spices and raw marinated meat is layered and then finally cooked together using the traditional dum method.

This kind of biryani too, is light on spices.
 

9. Sindhi Biryani

This kind of biryani originated in the Sind province. It uses rich spices which make a little spicy.

This biryani has a distinct smell due the use of a specific scent. This separates it from other biryanis.
 

10. Bombay Biryani

As the name indicates this type of biryani is quite popular in and around Mumbai. The Bombay biryani bears a strange similarity with the Kolkata biryani in its use of potatoes. The distinct feature of this biryani is the use of potatoes, lots of spices & green chilies and a hint of the signature kewra flavor in the end.
 

11. Memoni Biryani

This version of Biryani is similar to Sindhi biryani but with a few changes. They prefer lamb over chicken and there’s more yogurt, potatoes & fried onions. They also use minimal food coloring so gives it its distinct colour.
 

12. Palakkad Rawther Biryani

The Palakkad Rawther Biryani is a form of Dum Biryani introduced by the Rawther Muslim community in the Palakkad district, Kerala. The Biryani is high on spices and meat portions. Almost no lemon or tomato is used, but onions only.

Well, there is no doubt that dish will always remain our favourite.
